One of the things we've been trying since the pandemic, is to make a new recipe each week. It doesn't always happen, but I'm proud to say I've tried countless new recipes and learned a few new tricks! Even though the natural ability to cook isn't one of my gifts, I was blessed to have a father that does cook. He was able to pass his talents to my children by spending countless hours teaching them how to make delicious meals and tasty desserts. Spending time in the kitchen watching them work together was always heartwarming.
This week, I wanted to try something healthy for dinner so I chose this yummy sounding pan fried salmon recipe. For a side I made some steamed veggies and served fresh mozzarella with tomato and basil + balsamic dressing. I've never been great at making fish, so I wanted a guideline to know how long to cook things for and how to get the skin nice and crispy! I'm proud to say it turned out SO well. If you like salmon, you'll love this. Here's what you'll need.
4 (5 oz) center-cut salmon fillets (about an inch thick), skin can be on or off
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
Lemon or citrus as a garnish
Your favorite spoon or spatula!
Step ONE:
Bring the salmon to room temperature 10 minutes before cooking.
Step TWO:
Warm a large nonstick skillet with oil over medium-low heat. Season the fish with salt and pepper. Raise the heat to medium-high. Place the salmon, skin-side up in the pan. Cook until golden brown on 1 side, about 4 minutes. Turn the fish over with a spatula, and cook until it feels firm to the touch and the skin is crisp if desired, about 3 minutes more.
Step THREE:
The skin can be served or removed easily with a knife or spoon.
Step FOUR:
Plate your salmon and add your sides. Squeeze your lemon or citrus over the salmon to add flavor if desired. Serve with veggies or caprese salad for a healthy meal the whole family will enjoy!
